Charles Mallory

Novice student to polished chef

Chef and owner of Blue Chip Catering, Charles Mallory, is a native of Daytona Beach, FL. He started his culinary adventure at Daytona Beach Community College, and then transferred to Bethune-Cookman College where he received his Bachelors of Science in Hospitality Management in 2000. After working and receiving additional training and experience in the industry, he enrolled at Orlando Culinary Academy’s prestigious Le Cordon Bleu program in Orlando, FL in 2004. Here he learned the fundamental skills about cooking and baking. He earned his Associates in Science degree in Culinary Arts with honors. He also received his Masters in Business Administration (MBA) in Hospitality Management from Strayer University,


He is the owner and operator of Blue Chip Catering, Consulting, and Personal Chef Services. Licensed and Insured. Services also include cooking classes and menu consulting. Blue Chip Catering specializes in a range of recipes of American, Asian, Caribbean, and Italian cuisine. Through his business, clientele includes business executives, doctors, lawyers, and professional athletes. Chef Charles Mallory has won numerous awards as well as his work appearing in various magazines and newspapers.


Chef Charles' list of achievements includes:

  • Operations Chef at Vince Carter's Restaurant

  • Personal Chef of NBA Superstar Vince Carter

  • Conducted a $30,000 a plate dinner at Vince Carter's home for President Barack Obama's 2012 Re-election Fundraiser

  • Prepared dinner for Vice President Dick Chaney at the Daytona International Speedway

  • 2019 Inaugural Emerald Ball Culinarian of the Year Award Recipient

  • Won top prize in culinary event at Daytona State College in Dessert Category

  • Worked in the Executive Kitchen for NASCAR, preparing meals daily for executives, such as Jim & Brian France.

  • Founding member of the ACF Mid-Florida East Coast Chapter and Former President.

Catering for events can vary depending on the job. Understanding basic staff members to have for your catering event is critical. Although numbers vary, there are certain roles that are a must for every catering event you have. Let our experienced catering staff handle your next event.

OUR SUPERVISOR  Their job is to ensure the cooking staff is completing all of their tasks in a timely manner. Any questions or concerns that arise will be handled by the supervisor, and ensures all is good to go.

OUR CHEFS  Our chefs are the food preparers and handles all of the decisions regarding the menu.

OUR SERVERS  Our servers are the representation of Bluechip by bringing food to all guests, filling water, and passing trays around.  



Blue Chip Catering is based in  Ormond Beach, FL. We are available for private dining experiences, customized meal planning for athletes and cooking classes.
